Dill is an annual or biennial herb of the parsley family (Apiaceae) and its dry fruit and leaves which are used to season foods. Native to Mediterranean countries and southeastern Europe, dill is now widely cultivated in Europe, India, and North America. Dill has a warm, slightly sharp flavour somewhat reminiscent of caraway. Dill weed is a good source of calcium, manganese and iron, and as an antioxidant food, its flavonoids provide anti-inflammatory and antiviral properties that give it a whole host of incredible health benefits. Dill weed has antioxidants, such as vitamin C, beta-carotene, quercetin, and kaempferol, that help it fight free radicals. Free radicals are reactive chemicals generated in the body during natural metabolic processes as well as due to exposure to environmental toxins. Dill is also believed to help soothe stomach issues, such as colic in babies. It has antibacterial properties and can be used to freshen breath (particularly in the case of dill seeds). Dill is also believed to help stimulate milk production in lactating women.
